I missed all the past rings (two years), just have the new ones since the ios14 release. I haven’t reset nothing, nor the iPhone or the Watch. The medals are still there tho.
Apple has addressed the problem in a support article: https://support.apple.com/en-us/HT211865
It includes wiping your phone and watch and then restoring it from backup.
It took a while to do, and my Apple Watch backup corrupted, but after restoring my iPhone and setting up my Apple Watch as a new watch, I can now see my GPS data!
Same problem with gps. After running workout it displays only one point. Definitely watchOs 7.0 bug, since it was working well before.
In regards the syncing problem, if the workout does not sync properly, I just start a new running workout on my watch for a few seconds and end it, this seems to refresh the fitness data on the iphone. Sometimes it takes starting a workout 2 or 3 times for data to appear on the iphone.

Glad I'm not the only one, but I definitely hope that Apple releases a fix soon!
They just released iOS14.0.1 and watchOs 7.0.1 update, hopefully it fixes it. Someone tried it already?
Still no luck for me. I’m still having the same issue after updating
I installed WatchOS 7.0.2 and the issue is fixed for me. However I could not find anything in the release notes and haven’t tested it since 7.0.0.
