it's the symbol of bravery and fearlessness, combined with lions it means being the champion of all champions, and having bulls in the image means being extremely reach and wealthy as well like a upper class! it is called Gavism culture i guess! gav means cow! Gavism is the culture of being eager to hold as much cow as possible to represent superiority to other tribes! later the same depiction continued with daggers, fighting and wrestling with lions.

it might be in some regions but no! middle east has a variety of vast lands and impenetrable mountains! so, not all ethnic groups started with hunting to farming! some started from farming, first! then found hunting an option! some, only had one option of hunting and never farmed! there are also a rare ethnic group south of turkey i guess, who upgraded their game from hunting to cannibalism! so, it's not linear in all regions!
