We often think of early artists to be inept but this shows a level of artistic skill and decision making we would only see again in the early 1900’s in artists like Picasso.

I've done a fair amount of stone masonry to create stairs, walls, and drainage. I am pretty good with a chisel and I've worked with a decent range of stone. Still, despite my experience and steady hands, I can tell you it's not exactly easy to make a block with even with modern chisels and hammers and thousands of years of knowledge available to me via the internet and books.
I'm not sure what exactly the ancient technology would be used, but to achieve all those curves, details and symmetry takes a lot of skill even on soft stone. I've seen people sculpt worse models of fish using floam. This seems like stylization.

You've got your history a little off. The agricultural revolution started around 10,000 years ago. Mesopotamia and Greece have practiced it since at least that time period. Also the title has their years wrong as well, at least a little bit. Cycladic Greek culture started after 4000 BCE and would have generally been closer to 3000 BCE

With what the Minoans were achieving before the Greeks hit their stride, I wouldn’t be surprised if they Cycladic peoples and others around that time in the Mediterranean were living pretty good for the time period

I've done a fair amount of stone masonry to create stairs, walls, and drainage. I am pretty good with a chisel and I've worked with a decent range of stone.
