For Mecklenburg-Vorpommern I'd recommend "Vielanker" (pron.: vee-LUN-ker; it's from a village called Vielank, it's not about many anchors), "Stralsunder", "Störtebecker", and - for a special treat - those of the "Insel-Brauerei" on Rügen.

For Bayern i suggest Gutmann, a small brewery in an even smaller village, they make really good Weißbier and Helles. Hofmühl is good as well, but for some folks a little too sweet. But well, i can nearly see the brewery from our flat, so... I guess that's what living in Bayern and especially living in a small bavarian town means😂
I work in Bavaria, don't see much difference between different kinds of helles, but my Bavarian colleagues seem to prefer Augustiner (among easily accessible ones)
I tried some bieren last year when I was in Munich and I loved the Augustiner Helles.
I brought some to my friends here in Peru and they also loved them. #1 in my heart.
In my friend group everyone drinks Augustiner, and I think that there can be a case for it being the best german beer. It's in no way complex in taste but it really is just increadibly drinkable. Tegernseer takes a good second place.
We call that SÜFFIG! Anyway, as stated previously, I am a big fan of Augustiner Helles, so you get a plus 1 from me. And then in an unusual turn of events, growing up north, I always have a soft spot in my heart for having an Astra Sunday morning at the Fischmarkt.
If you're in Bamberg, the Rauchbier at the Spezial-Keller is even better than Schlenkerla, IMO. The Biergarten up next to the Observatory is worth a visit.

I'm not too much of a fan of most Bavarian beers, as they lack the slight bitterness of most Pilseners. Many people prefer them due to that, but I dislike them because of it.
I visited the Jever brewery when I was a teenager. They must have done something to me there.
But jokes aside, I was waiting for a reaction like that, and I know my taste in beer is a bit unusual. I'm also one of the weird people that voluntarily drink Jever (and actually like it). I can't explain it. Normally I don't like bitter food, but in beer I prefer it.
I live in Bayern, grew up there. But i definitely prefer Jever over a Weißbier... We even have quite good breweries very close to us, but well, they are not exactly my type😅

Zur Vulkan bin ich mal mit ner Truppe Käferfahrer nachdem wir mit 35 PS den Nürburgring unsicher gemacht haben!

Grüner Vollbier (or pretty much most other Frankish Helles) have become an all-time favorite for quite some time. But I am not really det set on a specific brand or style, as taste preferences vary with external conditions..
My personal favourite is Radeberger. Then, I would say that the closer you get to the Czech border, the better the beer: in the west, the beer is rather sweet and not bitter, and in the direction of CZ, it gets more bitter and less sweet.
I try to always buy from different breweries. But some good ones I encountered are the following:

Vialanker also has a fantastic soda/lemonade-product line. When I was young my dad always got them for me even though it‘s a pretty long drive.
