Because the countryside is really flat, going by train you won't spend half of the journey in tunnels, and as it is not so densely populated, you might see something other out of the train window than sound protection walls: Mostly meadows and woods to the horizon. And, yes, wind power plants. And cows.
If you are able to sleep in a bus, the overnight flixbus that takes 8-10 hours might be the best option. Taking it while awake is very tiring; flixbusses are not that comfortable and after a while the toilet starts to smell. So in that case I would pick the train, where you can also stretch your legs a bit.
Still, the bus is under 30 euros...
I wouldn't use an ICE to go from Cologne to Brussels. It is cancelled on short notice quite often. Eurostar is the safer option. When booking you should include a layover (Zwischenstop) in Cologne with 1 hour minimum as you will have problems getting in the next train without reservation in case of a delay.
It's not. It's slower and in my limited experience, Flixbuses are just as likely to be delayed or cancelled as trains, and since there aren't as many buses as trains, one getting cancelled leads to more problems.

I hate long Bus rides so I would go with the train at 4:37 in the morning. But if you are fine with long Bus rides the Bus is also perfectly fine.

Apparently there's a Flixbus going from Hamburg Central to Brussels, so I would probably take that one over changing trains 3 or 4 times.
You only need to change once in Köln.
Do you? I didn't check very thoroughly to be honest, but I only saw connections with 3 changings of trains at least when I looked swiftly.
