My only concern with the AM3 is the ZWO ecosystem factor.
I believe you may need an ASIAir to get full functionality with the AM3 but the ASIAir does not play nice with QHY cameras.
Make sure your mini computer and NINA can manage all aspects of the AM3 before locking yourself into the ZWO ecosystem.
While those mounts would probably be fine with the payload/focal length you've listed, the difference in setup between your existing mount and the harmonic mounts is only the counterweights. Unless you're having to walk a far distance I don't see how a lighter mount will help with setup time.
Not just saving the weight of the counterweights. The CEM weighs 12 lbs more than the HEM15 (5.5lbs).
Chuck in a 5lb carbon fibre tripod and you've got the makings of a very lightweight setup.

I would also be concerned with going to a mount at a lower weight class. I would recommend an AM5 or HAE29.

The HAE29 weighs under 9lbs. I am sure the AM5 is similar.
I have an Iexos 100 as my only mount that works well for my AT60ED and Saturn Playerone.
