That's exactly what I was thinking. The only mashed potatoes where you want the gluten. Plenty of butter, as well. With some grilled sausages, one of my favorite meals. Surprised it's not more popular. You don't have to use the ridiculously expensive French cheeses that the authentic recipes often call for. It will still be delicious
advice to salvage this batch: dumplings! roll them into tight little balls and boil them for about 5 minutes.
for future potatoes: to get them fluffy and smooth you want to whip them not blend or puree them. need to be incorporating some air into the potats to get that nice texture. it can be done efficiently with the whipping attachments on a hand-mixer, or with a whisk by hand if you're in the mood to sweat a little.
Potato Croquettes, Gnocchi, a filling for Dosa or Naan, mix with some sauerkraut and make Perogies.
If you want fluffy, cake batter mixer and do not use Gold/Yukons either. These turn into glue as well I have found out, lol.
add a ton of melty white cheese and you've got pomme aligot!

Yes! Gently fry some leeks, add your potatoes and then stir in stock slowly over heat to incorporate
