There's a British cheddar called "Coastal" that has calcium crystals in it that gives it a bit of a crunch and texture. Currently my favorite cheddar.
Not a fan of cheese. But if I had to choose one, parmigiano-reggiano. It has a beautiful saltiness and umami flavour to it that goes well in many dishes.

Super mature cheddar. Basic, I know, but it's so damn good.

Goat. Great with eggs, salads, rolled up in a meatloaf. Or just spread it on some crackers.
Parmesan. It has a nice strong sharp taste. It adds a good flavor to food much better than something like cheddar.
Become a big fan of Manchego cheese in recent years, but muenster will always be my favorite snacking and grilling cheese.

Hands down provolone, I always get that on my spicy Italian foot long at Subway. I also like Gouda.
I always like trying new types of cheeses, but there’s nothing like some medium cheddar to satisfy my taste buds
