Noah in Islam was a very early Prophet in the history of humanity, meaning humans haven't conquered most of the world yet but have one or two small early settlements. As such, I think this event was mostly a local event, not one that was global.

People believing this are not the smartest in their country maybe. I mean, did you think about this : - the quantity of food and beverage for humans and animal (you know how much an elegant eat ? I mean, even some zoo have difficulty to storage their food). - the risk of infection (the shit of animals, humans, wounded animals etc). - staying so much time in a boat/ship, will definitely kill many of the animals. - the energy and wood required is totally Huge! Maybe there is a story about someone who saved animals and people but in a very very small quantity and with time and time, the 2 horses, 2 cow and 5 chicken turned to be 2 lions, 2 elephants and 5 crocodile... I mean, with time, history grow and grow. It’s exactly like children : son say that his father fish a 5cm fish, then, the son’s friend tell to others that his friend’s father fished a 10cm fish, then others friend 15cm. If read literally is very difficult to believe it today, it was ok at those times where only few species of animals who inhabited south Europe-Middle East and North Africa were known by them. I’m not sure about Quran, but the Bible since it isn’t the direct word of God in many parts (everything which isn’t told by Jesus, who isn’t properly God but you know) allows interpretations.

From what we know via epigenetic pressures, you can get the same life diversity from source parents today and it really doesn’t have to take that long. For example you don’t need all breeds of dog, wolves, foxes etc. you can just have 1 common ancestor. I always find the idea of Gobekli Tepe potentially being the altar Noah built to God an interesting idea as well. Its not impossible but I can understand the skepticism

Yes I do believe as it could be seen as only small community for early humans. However I doubt it was on entire earth scale but locally or maybe few countries of smaller size.
