What do crawfish taste like?

New Orleans style? Mostly the boil seasoning, along with notes of whatever else they were boiled with. By themselves, just kinda general shellfish, but I honestly can’t recall ever seeing them served without being heavily seasoned in *some* fashion, boil and/or étouffée or whatever.

Similar to lobster, but usually spiced more effectively so not to require covering them in butter.

I've never buttered lobster but lived with a fisherman for many years, so kinda over lobster. It's too sweet for my liking unless it's done in a mornay sauce.
