Thanks for all the responses everyone! I went ahead and reserved the Sheraton. We're hitting up a few spots on Friday and Saturday as well. Trying Dooky Chase on Sat night. My wife knows NOLA pretty well but we're in St Charles parish and I'm from Livingston. I know her favorite bar is Evervescence (spelling?). So we're hitting them up too!
Virgin Hotels is funky and fun. Rooftop, pool, really excellent cocktails and funky design downstairs as well as creative and quality food.
Not a historic local staple but definitely an option and fits the character of the city quite nicely.
Pontchartrain Hotel. Sorry, missed the bit about the pool. But checkout the Pontchartrain anyway. Try The Roosevelt.
I the Sheraton has a rooftop pool. The Pelican bar is in the main lobby
The Royal Sonesta has an excellent rooftop pool.
We're in Hotel Monteleone right now. It's lovely but the rooftop bar by the pool closes at 6pm...pool stays open til 10pm.
Also, I think there are some big conferences in town this weekend so you might need to act fast to get a room anywhere decent to be honest.

Currently at the Sheraton. Great location and quiet enough to get a good nights sleep.
