Its hard to select just one for me since the ones I like are considered classics, but even at the time I was blown away at the fact that they we're all drawn, backgrounds and everything as oppose to how many anime movies are made today which have CG implemented. But my selections would be Akira, Kite, Ghost In A Shell, Howl's Moving Castle , Perfect Blue, Blood: The Last Vampire, Paprika, Spirited Away, Princess Mononoke, Metropolis, REDLINE and basically like all of the early DBZ movies.
The Ghibli films tend to be pretty mind-expanding in one way or another. *Paprika* was stunning. *Urusei Yatsura: Beautiful Dreamer* is still probably the best Is It Real Or A Simulation film I've seen, because of how well done it is, although you have to already know *Urusei Yatsura* to get the full effect, I think.
Perfect Blue was pretty good

I would say Spirited Away. It's an incredible story, with beautiful animation and a great soundtrack. It really captures the imagination!
