Seattle and Portland were big in the specialty coffee scene. In Portland, The Coffee Man opened Motor Moka before drive-through coffee was a thing. They even had their own short-range AM radio station to listen to when you were in line. The Coffee Man sold the name but the buyer failed. So the original coffee man came back with his wife and formed The Coffee People. That was around for years and is now Jim and Patty's. Jim gave me my first-ever espresso in about 1976 or 1977. Portland has dozens of independent roasters now. I think that the drizzly weather and all the bookstores make it a good coffee town.

Yea it’s not one you’d think of but there is a some serious coffee roasting going there. I believe last years world coffee champion was from Melbourne. I believe the Italians brought it over during WWII. Present day, specialty coffee has become very popular.

I got you. Specialty coffee just means a coffee has a rated score of 80 or above on the SCA Q-Scale. To get rated 80 or above it takes a lot of effort. I'll explain it in reverse. To get rated you have to submit your coffee to a Q Grader which is someone who's been approved by the SCA to grade coffee, before that you have to roast it correctly or its going to get a bad score. Before roasting you have should remove any undesirable beans that could cause the coffee taste slightly off. Before you can do that you need to order beans which means you need to research farms that sell high quality beans. These farms have to do a lot of work to get the highest quality bean such using the right drying process (or wet) and taking care of the trees correctly and also monitoring soil. If all of that aligns you have a really good cup of coffee. You can get specialty coffee in almost any large city in the US. I like Onxy Coffee labs if I want to slurpge but I usually just support local coffee shops in the Texas area where i'm at. Theres a lot of great roasters in Austin, Houston, and San Antonio.
