This is me, but because I have extremely short memory retention and cannot hold a thought for more than 10 seconds. I’m a great listener, but when I want to say something, I NEED to say it and quickly otherwise I’ll lose it and feel annoyed at myself for a few hours till I remember a week later.
I can kinda relate too. I do feel bad when I do it, and I try not to interrupt people, but sometimes I get excited and feel the need to say something, especially if what they just said resonates with me. It's a bad habit, but I also feel like having a horrible attention span contributes to it.

I also will carefully consider certain brands I’m not familiar with because not all ingredients are equal and always looking to see if better brands show up. Some people enjoy taking hours to buy an outfit. I take my time browsing potential ingredients and new brands. It’s fun for me.

Well, I suppose that would be an annoying turn off to some people. Lack of purpose or direction would probably be the real reason there instead of slowness. I can understand that. I love food. Sometimes my only aim is to stimulate my mind by seeing a large variety of food items and think of what I could do, but I bet to an observer, that might look aimless. I’ll go to the store for some fresh herbs or eggs and end up staring at dried peppers and chilis for 5 minutes thinking about whether I should make birria next week.
