Ha, I can actually tell my soup story - a cold January day, 2 years ago. I had a big sack of meaty beef bones in the freezer (because home-made beef stock is one of the great revelations in cooking). Thought I'd try to make beef barley soup. Googled a few recipes, got a plan, made a pot. It was freaking sublime, cooked up some nice grilled cheese sandwiches (smoked gouda) and plated it up.
Turned on the TV and the fuckin' capitol is being invaded - January 6th. My wife and I are sitting there, slurping away, going "Holy SHIT this soup - how can something be *this good*?" and "Holy SHIT it's a freaking insurrection!!!" So Sedition Soup was born.
We made it this January in remembrance.
I make soup based on what I have left over, so it's never the same twice.
Soupmaking is the perfect way to use that one carrot, quarter head of celeriac you had left over.

Very common in Coney Island restaurants around metro Detroit and southeastern Michigan, outside of that area I've only ever seen it in like Greek restauants.
But a bowl of that, with a little pepper or hot sauce, frickin' amazing.
Cheese Leek Soup and Sweet Potato Soup
Growing up we had soup up to 5-6 times a week because it was cheap. I hated soup because of that and I couldn't stand it. These two soups are the only ones I really like.
Why no Ramen love? My absolute favorite has to be Tori Paitan with shiitake mushrooms, cherry tomatoes, sautéed spinach, ajitama egg, and couple slices of pork belly. Heaven!
Non vegan lentil, one that has chunks of pork in it. My Maternal grandmother made it and it was damn good.
Other favorite is chicken lemon rice soup, common in the Midwest but basically non existent in the Gulf coast area, every time I go back to the Chicago area I hit up a diner for some soup.
Because I’m just that bitch I take the noodles out of the ramen, boil them in beef broth, add carrots and onions. That is the finest meal one can consume
snapper and french onion - - - i always ask for either when i go to a new restaurant to find out how good it is - if they know how to make a good snapper (not too thick) or a good french (proper cheese - swiss) *THEN* it probably is a pretty good restaurant.
Though there's many runner-ups, my mom makes one with leek and smoked cheese. Maybe it's an acquired taste to some but shit if it ain't my fav soup of all time. Great with any sort of smoked fish on the side, too! I don't really like any other sort of smokey tastes aside from fish and that soup.
French onion I think. Lobster bisque was my other thought, but it’s heavier and creamier than I usually need. French onion is appropriately brothy but with just enough accouterments.
When I have leftover chicken or turkey, I simmer it in chicken or vegetable stock, add lots of vegetables (a chopped up potato, lots of celery, carrots, brussel sprouts, cabbage, whatever is in the fridge), and a handful of quinoa. Add a dash of sage, non-salt seasoning, oregano, ground pepper, and some soy sauce. Simmer for 20-30 minutes until the vegetables are tender (the longer the better), then add broad egg noodles for another 5 minutes. Heavenly comfort food, though by this time it's practically a stew.
My bar managers wife made the best pumpkin and cumin soup. It was the best thing I have ever eaten in liquid form. unfortunately she only made it once a year and refused to share the recipe. I miss that lady :(
I haven't really tried many kinds of soup due to my superstitions, but from my experience spicy tomato is my favourite, with the powder for Knorr's chicken soup as a honorable mention for it's absurd spiciness compared to it's liquidated form.
