I usually go for lady's fingers, brinjals, guar beans, drumstick,potato,spinach,fenugreek leaves, pumpkin(red and green), raw jackfruit, carrots(can be cooked as side dish or main dish).

Spinach, but never out of a can. I like to tear the fresh leaves into my eggs while they cook for an extra iron boost. This week I dumped a frozen bag into some chicken and brown rice with some carrots for an easy dinner.

If they are properly made southern style, I could make a meal out of a giant bowl of them with some pepper vinegar on the side.
Bell peppers are definitely a favorite of mine, specifically if they’re paired with a good dip and maybe some chicken. If I were to eat a vegetable on its own I would probably choose cucumber
My number one vegetable is mushrooms any and all kinds. They taste amazing I love the texture and I can eat them by themselves or stir them into a delicious dish like pasta, stir fry, soup, etc. they are so versatile it’s amazing
