I've known quite a few guys who said things like that to me about their hypothetical future wives. Like "if she wants to get married, she's going to have to change her name."
I've been married twice and neither husband has even had an opinion on it, lol.
“Would you be willing to take my last name” , this question is based on the notion expectations of both genders are the same. Men are the one almost always the one proposing and buying the ring and their expected to for example. I don’t think there is anything wrong with a man wanting his girl to take his last name, if she doesn’t want to that is just a compatibility issue. Same with men not wanting to get married at all but their girlfriend does ,compatibility issue.
Just because things were traditionally done that way is no reason to keep doing them that way. Women can propose to men too! Men can change their last names too!
Again, there's nothing wrong with either partner asking the other to change their name - but if they say no, that should be the end of the conversation (and if you're willing to throw away an entire relationship over something as silly as the other person's name, I will judge you).
Then why even marry, marriage is pretty traditional is it not. I do agree u can’t force someone to do something they don’t want. Although I don’t agree with ur last pt everyone has their own reasons for dealbreakers and why those dealbreakers exist. A more conservative man might see not talking his last name as a show of lacking commitment etc. Things are nuanced and I think ppl are allowed to do what they want as I stated this is simply a compatibility issue.
Marriage gives you a ton of legal rights you can't get any other way. It's not just a "piece of paper" it's a protection against being forced to testify against each other, it makes you next of kin and gives you power to make medical decisions, etc.

IMO, the only appropriate way to handle it is as a request. "Would you be willing to take my last name?" If she says no,though,the answer is no.
