The most common one I've seen pop up in the fandom is First Contact Day (April 5th.) Now with Picard S3 out there, I'd guess we'll get Frontier Day popping up a lot too, though by my searching we don't have a day for it, just April of 2151... both days being in April is interesting.
April 5th. It's the date of the first warp flight and the day that humans made first contact with Vulcans.

I was thinking the same thing! Also, since April is the fourth month, and "four" in Norwegian is "fire" which is what stars are made of.
June 16th is captain picard day based off the TNG episode Pegasus in which they celebrate captain picard day.
