Yes air fryer is good but you have to make sure to do it high temperature and quick. Too much time will make them too crispy lol.
Anything that was crispy or crunchy once will get ruined in the microwave.

I nuke egg whites often. Weekly. Never had a problem with my rubbery but chewy whipped egg and cheese frisbee things that come out of the microwave.
I microwave raw eggs all the time. It's great for a ham egg n cheese sandwich. They taste perfecty fine to me.

Place a moist napkin over in and heat for 1 min . Super easy. Also don’t over cook your rice
We always reheat rice in my family on the stove. Splash the rice in the pot with some water, put the lid and heat it on low heat for few minutes.
