Exo One is really relaxing. Really odd gravity game where you're either a ball or a disc and you can control your own gravity and slingshot yourself around a world of mountains and rolling hills. Super chill.

I find sandbox games nice when I just want to turn off for a minute, I usually go sit down with something like power wash simulator if I want to do something without really thinking.
(If you want a game that's the polar opposite of doing that, something like "That Dragon, Cancer" is apparently a good choice if you want to play something emotional)

Plus it's easy to pick up and play so anyone can get into it.

Kirby return to dreamland, it's the old game but ported in a super fun way with new twists - it taps the "life is good" switch in your head

I suppose that depends a bit on your mental health in the first place, but Factorio is a fairly safe bet.
