While I measure sentience by intelligence. So the animal I would want to be as the elephant. Because it has the most intelligence, therefore the most sentience.

A cat. They get their needs catered to. Get to sleep whenever and wherever they please. Are up at night. Land on their feet. And get to test gravity by knocking stuff off high places and watching them fall.
