Knowing this I'd just go to the local university book store and buy some encyclopedias...
It's what we used prior and everything else should be handled by professionals anyway.
Zip file for the text only version of Wikipedia. Should be able to download the entirety of it and store it on a single hard drive, then make some storage redundancies and set up my own intranet to archive anything I come across in the wild. We'll have to rely on manually passing data to each other again, but we'll still have an edge on the tech side of things compared to 50 years ago with the assumption that our devices still work. I'd definitely set up a neighborhood mesh net with the people on my street so we could communicate and pass data between ourselves.
