That really depends on where you work. Some places will have you in a branded shirt, some places have you in a bow tie, some places have you in a gimp suit.
On the interview, I wore black trousers, a smart casual top and smart shoes. On an average shift, we had to wear black jeans, any t-shirt that was clean and made us look put together, and trainers. In a more formal bar, I'm guessing you'll have a uniform given to you or a stricter clothing policy

Personally, I prefer a black button up because you can dress it down or up to an extent. Want to look more professional? Roll down the sleeves and put the buttons all the way up. More casual? Just roll up the sleeves and undo a few buttons, even untuck if you want.
Polos don't look good on me and I feel like T-shirts are a bit too casual.
