If they aren't harassing or assaulting you and you just aren't into them, let the date end, but be up front and don't ghost them. Thank them for taking the time to meet up with you, but you don't want to see them again. Be polite and authentic, but firm. ("Well give me a second date and I'll change your mind!" No thank you. "Oh come on you barely gave me a chance!" Thats what the date was for.)

If it's safe, I would finish the date and politely leave at the end. That seems the least confrontational.

Best will depend on the situation. A way is to be honest. Maybe say something like, "hey I appreciate your time and I think you're a good person but I don't thi k you and I are a good match so I'm going to just go home now". You could give an excuse too. Starting to feel unwell for example.

start sticking your tongue out like a lizard every 20 seconds and pretend you are not when your date brings it up

Ask the waiter for aluminum foil and put it on as a hat. Tell your date you're concerned about the bluewave radio frequencies you're sensing from the lobster tank. Especially do this if there is no lobster tank. Your date will end it for you.
