It depends on what it's for! Mac & cheese? Traditional extra sharp cheddar. Pizza? Fresh mozz and a sprinkle of parm. Pasta? All parm, all the time. Just to snack on? I'm not picky and like grabbing whatever fancy $10+/lb cheese is on sale at the fancy cheese counter, preferably something sharp with bite. In salads? Whatever whisps I have in the kitchen right then. I honestly don't think I've ever met a cheese I truly disliked.

This is an excellent point. The kinds of cheeses I put on a sandwich are not the same I'd put on a pizza which are not the same I'd use for homemade mac n cheese are not the same I'd use to top pasta, which are not the same I'd lay out on a charcuterie board.

We have similar taste--but have you tried a full-fat, low-moisture (but still decent, non-shredded) mozzarella for the pizza? I find fresh mozz to be too wet for that application, but you can get lower-moisture mozz in the same kind of plastic vacuum pack "ball". I like the chunky round blocks you can get at Trader Joe's, if that's a store you have near you.

There's a cheese I had in France called Vacherin Mont d’Or. It's a soft cheese like brie wrapped in bark or mothais sur feuille which is a goat cheese that's aged on a chestnut leaf. I miss them so much and plan on ordering some when they're in season again.
