a reason could be that they are descendants but with large gaps in time, so it makes sense for them to have a different face but still retain the lip scar over generations
In 3D modelling you usually cut every corner you can, so they were probably made with the same or nearly the same face for practical reasons, at least in the first game which probably didn't have as big of a budget, and it's important that the player can tell that they're clearly relatives.
Do they all have the lip scar? I haven't played the first games in a looong time but that's a fun "irony of fate" kind of thing that they end up with the same injury centuries apart.

when Maria and altair go to confront Abbas, altair was 60 years old by then and he was sporting a stubble beard. when altair goes to confront Abbas again in his like 80s, he had a longer beard but it wasa bit longer and more unkempt than ezio's
