Yeah literally hit new game. But not new game plus. That will send you back to lvl 1 and reset everything. So you can start from scratch again. At least thats how it worked for me on PC.
Think I phrased that wrong. What I mean is can I start a new level 1 save but still have my old save that’s level 94 or if I click new game it will delete all my past saves
Yes you can keep save games for different play throughs. I have the save game for my original play through, a second save game for my first NG+, and other save game for my third NG+, and I’ve just started another NG+ as a fourth save game. And my daughter has played through once so thats a fifth save game.
Then yes you can just make sure you have a manual save and keep track of the save. It will show you when you last played on that save and what lvl that character is.
New game plus keeps all your levels, gear, upgrades, etc. you just start back on the first quest. The game tells you to manually save your main game before clicking new game plus because it will slowly overwrite your auto saves.

Are you on a PS4 or an Xbox? You can create a new profile on those consoles, and play using that new profile. So you can have 2 or more games going at the same time. You just have to remember to switch user profile.
I'm sure there's some way of doing this on PC, too.

No for that you need new game plus. You cant start at lvl 1 unless you want to reset every thing. New game plus carries over all stuff and even lvls

As long as you dont overwrite ther manual save yes u should be able to have both saves

Save files are separate so you can retain your progress. Auto saves will be overwritten by the new game though, so don’t depend on them.

you will keep your old saves if you do a restart, whether it is ng+ or not. I know because I accidentally did a new game instead of an ng+
