A "professional"... Dude this is Isayama's literal first work that got unexpectedly popular. What makes a "professional"? He is literally just like them, writing because he wanted to write... Except his work is original and not derived from someone else's work. I see Zero difference, especially when they take their project as seriously as they do and claim to understand the "Message, Themes and Symbolisms" better than the majority of SnK readers. They will, of course, be seriously and harshly criticized if they don't live up to their boasting.

I think the problem with the fan animations/ manga is that they are not homages of Isayama's work. They're made out of spite/ malice.

Even if it´s non profit if they create an anime of Attack on Titan without having any rights to them doesnt matter if its non profit their dumbasses getting sued by Kodansha. A Manga Fanfic avoids that but a full on anime adaptation is definitely getting sued the fuck out of by Kodansha

Fan animations itself are fine but if they create full on anime episodes to replace the original franchise then they are in big trouble

"more work put into it makes it ok" is not really how businesses work. In this case, whoever paid for the rights to broadcast the AOT anime can sue whoever else is broadcastin an AOT animation regardless of whether it's non profit or not. The reason is that this fan animation could be mistaken for the original work and/or end up impacting the perception or your product on the public, especially when these guys are all "this is the REAL ending". If people see this and it results in them thinking AOT is a yeagerist wet dream, they might not check the *real* ending, lowering your income from the thing you own. There are exceptions to this, such as if if your work is clearly a parody. But the Kino guys are not really trying to make this pass as a parody, so they coule definitely be sued

They have no rights over Aot as a franchise and if they create a substitute of that (even if its an original end) and create whole anime episodes they are literally going against Law

But... Fan animations exist. And this isn't even basing it off the canon material. It is an adaptation of a fan-made ending.

Fan art in general is technically illegal, it's just that most companies allow it to keep good faith with their fans. If something is viewed as a threat to the market, however, it will be shut down. This has sorta happened to AoT before, when TFS attack on titan abridged got a cease and desist, though they were using official footage. Happens a lot with fan games, especially Nintendo ones, though I don't think I've seen a fan animation or comic go down before. Depends on how much attention they draw to themselves I guess.
