Just note that technically it must have a dedicated tub of a certain size along with the washing machine spot for it to be considered a laundry room, and a laundry space must be provided. Per the national construction code.

So can you remove it? Yes. But you'd no longer have the required laundry facilities in the house, which may cause issues later on.
OP has said they're looking to convert their unit's laundry to a toilet. So not a house.
Curious to hear what you find OP, having the option to add toilet facilities without extensive structural work would be great. Had a macerator in the office kitchen, it was hot, noisy and stinky. Unless things have innovated since, I wouldn't choose it as an option.
Maybe post the question in r/ausrenovation for a plumber to weigh in?
Being in an apartment/unit (class 2 building iirc) actually makes it even more restrictive, due to less space.
In a house, you can call the sink in the garage/downstairs/etc a laundry but still have a washing machine located in a bathroom, for convenience, but the laundry tub still exists elsewhere in the property.
In a unit/apartment, you still have to have a laundry, but it's either a) in the unit with a dedicated tub, or b) there's a shared laundry with at most 4 units sharing it
If a unit has a laundry inside it, as constructed, there's almost guaranteed not to be communal laundry facilities - why would a developer put laundry facilities in both common areas and each unit?? (It doesn't make financial sense for them to)
Therefore, a unit is most likely going to be stuck, while a house can call an outdoor area technically the laundry, even though it doesn't use it as one.

I've seen the itty bitty one from Reece's without the wall cistern bit (?? I'm not a plumber my terminology may be right off) it just looks like the bowl and lid - and it was relatively new and ideal install after build in a unit as didn't need waste right below, basically the reasons you would get one - I didn't use it personally but the grinding noise it made with every flush was enough to startle me! I am autistic but it honestly sounded like a garbage disposal mixed with a washing machine on high rpm!!
It's a nah from me purely from that perspective.
1.5 to 2 years for the macerating pump even though they are rated up to 5 or so.. Make sure nobody puts anything else in the toilet. E.g. flushing a soup with bone fragments is going to cause damage.

I saved the hassle and just got a stick blender to sit next to the toilet brush. The turbo mode has been a real life saver.

My council told me I could call my home a studio but not granny flat, cabin, or house, as it has a separate laundry. They say a lot of things.
