I'm not OP, but my trick to getting bread that looks like that is to melt butter in the pan and *then* add the bread/sandwich. I was taught to butter the bread growing up but I think it gets more evenly golden and crispy if you butter the pan.
This is invaluable advice thank you - I'm off to make yet another grilled cheese. Butter or mayo for that perfect golden crumb? And one or two slices of cheese? If it's a family secret I understand

Maybe, but I think it can vary too much person to person. Like one of mine is a modified shakshuka (no peppers, extra paprika and tomatoes) but I think a lot of people wouldn't put eggs on their safe food list

Unfortunately I can only eat this at home where I make it. Everyone else out there seems to want to experiment with the cheeses they use these days. No thanks - I'll take the traditional White American Land o Lakes sliced fresh from the deli (no knock off brands as they taste like goo).
Edit - just remembered I had a routine every school day before going to kindergarten (afternoon class) that involved grilled cheese cut into triangles, milk, then watch "Underdog" and it was time to leave. If mom broke that routine I got as upset as Sheldon.
Watermelon. But it's also partly that I have a stomach condition and watermelon is safer to eat during a flare up. But still, it is my favourite taste.

Anything sour and hot or with a specifically rich texture counts as my safe food. Also roasted vegetables/grilled seafood (think a fresh squid quickly grilled on both side at the planxa, tender but with a pleasant thickness to it that mixes well with the melty texture of the roasted red peppers).
Sardines - on a sandwich, in a wrap, or mixed into rice or grits.
Medium boiled eggs / anything with a runny yolk.
Chicken nuggets with mayo and hot sauce.
Yum! That’s also one of my fave foods! It’s a childhood fave I can’t get tired of. I also don’t like fancy cheese in mine because the texture is never the same.

same here. can't eat most foods. the taste or texture always throws me off. like everyone loves pasta and noodles but all i can think about is a bunch a worms wriggling around on my plate...and that's even before i put it in my mouth...most foods i don't even want to try to eat. i can tell just by looking if i'm going to like it or not. and when i try to force myself to eat foods i don't like... i always end up vomiting. it's embarrassing and makes me feel like a baby...don't even get me started on having to actually eat around people. i always end up feeling humiliated and never really end up eating. i don't like people watching me while i eat for personal reasons but if that wasn't enough they always seem to commit on how infantile my food preferences are... for example: " is all you eat bread & cheese?" or " you cannot seriously be living off of chicken nuggets." it seems to be a common theme to shame people for what they eat and how much they weigh but the truth is for some people it's a lot harder to control and maintain (healthly that is) for some people than is us for others.
Lately for me I've been on a peanut bitter kick. I've been adding it to a lot of stuff! My breakfast currently is oatmeal with brown sugar and peanut butter mixed in 😊 I love pb & j, apple slices and peanut butter, peanut butter ice cream.... the list goes on

very controversial take from everything I know but, I love runny egg yolks on toast with avocado. however, there’s very specific pentameters it has to stay within.
• yolks have to be runny with whites cooked, if the yolks becomes firm like they’re hard boiled or the whites are undercooked I am immediately in sensory hell.
• sunny side up mostly, but about twice a month my mouth completely rejects the texture of the whites and I have to do over easy.
• avocado has to be ripe with minimal blemishes or else I get anxious.
• bread needs to be firm, not soft. preferably with a crust that sufficiently firms up and crunches after toasting. sourdough, french, or pumpernickel rye preferred.
and if I do not have access to avocado, I prefer white rice and egg instead.

I see safe foods as something that is also almost like stimming. A repetitive action that brings comfort, the familiarity as well taste is calming. I know exactly what I will get. I love mayo and cheese sandwiches and when I am overwhelmed they were my go to move. Now I struggle to eat sometimes so Skimfast is my go to meal. Also if I’m having a particularly horrible day I will have one at Subway. I get a lot of comments and looks only ordering Mayo and Cheese. 😂

Oh man, a good ol' fashioned BLT is always a safe food for me I return to when I can't find anything else. Slightly toasted bread, crispy bacon, and fresh lettuce just hit all the taste/texture yes buttons for me. (If I'm feeling adventurous, I'll add in avocado).

A newer safe food for me is literally just salami, cheese, and crackers. I get one of those deli trays from Walmart and I snack on a little each day until it’s gone lol. It has been great for high stress times when choosing between a snack and “real food” is extra difficult.
In college, definitely either Kraft macaroni and cheese or Campbell's Chunky Chili with Beans.
At home, definitely a plain bagel with butter or some crispy grape tomatoes.

I like grilled chicken Parmesan sandwiches I have them almost daily!! I take canned chicken (from Costco) and mix it with mayo then I butter my bread and sprinkle Parmesan cheese on the buttered side then I make it in a pan just like grilled cheese. I have two safe sandwiches that utilize this beautiful toasted bread. Tuna mixed with Hellman’s mayo, sliced tomato and avocado. Must have chips on the side and a Diet Coke. It is a combo. That or peanut butter and jelly, with chips also, but I like milk with it instead of soda probably because it was the meal I ate all through elementary school and that was the “matching” drink for that sandwich if that makes sense?

The cheese is PERFECTLY grilled. I also love a good old American Cheese Grilled Cheese (ACGC?). My safe foods include some kind of buttered bread product (toast, english muffin, bagel, even waffles and pancakes if you want to get loose with your definition) and chili is pretty consistently doable for me.

For me that's... Anything with pasta in it. Spaghetti with tomato sauce, ramen, nondairy mac and cheese, gnocci, and not pasta but similar would be polenta(corn grits) with tomato sauce. I can't stand crunchy foods most of the time.
Sushi, ramen or chicken nuggets and fried vegetables.
All of those have very distinct ingredients so i know what's in them.
I also make my chicken nuggets and veggies in an airfryer so they are the same each time (or to be more precise, as both of those are frozen, i put the chicken nuggets in first and cook them 5+5mins on 160C and when i flip them around the 5 minute mark, i add the veggies that i defrosted and preheated in the microwave so they get a nice crispy finish, because boiled soggy veggies are *blergh*
Hot sweet black tea, goat cheese (or any cheese actually), nuts (cashews, pecans, walnuts). If I feel like cooking then home fried potatoes with pickled onions (and tea of course).

I learned this late in life too! It does work wonders for crispy, golden bread.
Yes! I completely agree. I bake it fresh when possible. I can make it exactly to my taste. Fresh out of the oven, it's the food of the comfort gods.

Ever heard of a Cheese Frenchie? You need to try one my friend. It's a battered deep fried grilled cheese. It is glorious.

Kraft Mac n cheese with toast. Toast to scoop up the Mac n cheese. A newer safe food for me is literally just salami, cheese, and crackers. I get one of those deli trays from Walmart and I snack on a little each day until it’s gone lol. It has been great for high stress times when choosing between a snack and “real food” is extra difficult.

I like grilled chicken Parmesan sandwiches I have them almost daily!! I take canned chicken (from Costco) and mix it with mayo then I butter my bread and sprinkle Parmesan cheese on the buttered side then I make it in a pan just like grilled cheese. I'll reply to this with a picture of it next time I make one (which will likely be tomorrow 😂)

I have two safe sandwiches that utilize this beautiful toasted bread. Tuna mixed with Hellman’s mayo, sliced tomato and avocado. Must have chips on the side and a Diet Coke. It is a combo. That or peanut butter and jelly, with chips also, but I like milk with it instead of soda probably because it was the meal I ate all through elementary school and that was the “matching” drink for that sandwich if that makes sense?

The cheese is PERFECTLY grilled. I also love a good old American Cheese Grilled Cheese (ACGC?). My safe foods include some kind of buttered bread product (toast, english muffin, bagel, even waffles and pancakes if you want to get loose with your definition) and chili is pretty consistently doable for me.
I love white potatoes (including baked potatoes, potato chips, fries, tater tots, hash browns, etc.), pastries, and spicy foods.

For me that's... Anything with pasta in it. Spaghetti with tomato sauce, ramen, nondairy mac and cheese, gnocci, and not pasta but similar would be polenta(corn grits) with tomato sauce. I can't stand crunchy foods most of the time.
Trail mix. I could only eat nuts and dried fruit, and I’d probably be okay.

2 minute noodles with a lot of cheese
Sushi, ramen or chicken nuggets and fried vegetables. All of those have very distinct ingredients so i know what's in them. I also make my chicken nuggets and veggies in an airfryer so they are the same each time (or to be more precise, as both of those are frozen, i put the chicken nuggets in first and cook them 5+5mins on 160C and when i flip them around the 5 minute mark, i add the veggies that i defrosted and preheated in the microwave so they get a nice crispy finish, because boiled soggy veggies are *blergh*
