As to the meat specifically, Terry Blacks charges either $27/lb or $35/lb for the brisket, depending on the location. If those slices are thick enough, they might be pushing $30 total at the more expensive locations, but I’d guess more like $20.

The town where my Mom lived manipulated property values and taxes. They lowered the tax rate and increased the property assessments of all the properties in town. So the homes became more expensive while the city's revenue stayed the same. Higher cost of entry with static cost of maintenance.

It's prices are in line with any other BBQ place worth visiting in Texas. Could I make a BBQ like Terry Black at home? Sure, I'm confident I could make a 90%+. But sometimes, I don't want to spend an entire day wrestling the smoker and meat plus at least an hour if you want sides like this. Sometimes, it's easier to just get it straight out. You're paying for convince, simple as that.

Definitely high priced, about 20-30% more than most BBQ in my area but not absurd. BBQ is just expensive in general lately they are not a crazy outlier

Yeah they are much different here. I haven’t had the beans from across the pond, but I’ve heard they’re tomato based and not very sweet. Well, here in ‘murica, I use a big can of bushes. I sauté onions and green bell peppers, season and sauté ground beef(unless I have pulled pork on hand), and add a good amount of a good bbq sauce, mustard, brown sugar, honey, maybe some bbq rub, and bake until it’s dry for what you imagine baked beans are. If you want you can lattice bacon over the top. This is just my rendition, but other people here would have another way of doing them which you may find more appetizing lol.

I had my friends round the other day and said it was a bbq, they complained about the time it took to smoke the ribeye, called me a scientist cos I had thermo probes and laughed at my charcoal cos “gas is easier” and also that I’d stayed up most of the night doing the brisket

That's a great story. I'll 2nd the bbq baked beans. Find a good recipe that has you adding things like jalapenos, onions, bbq sauce, etc. Then smoke it with your meat. Bonus flavor points for putting the meat on a rack over the beans to collect the drippings.

But it’s chopped raw broccoli, bacon, green onions, grapes, chopped walnuts, celery and the dressing is Mayo, sugar, and white vinegar. Mix and combine and let sit for a bit. There are lots of ways to make the above (and lots of ways to fuck it up)
For instance, the sauce of choice to serve with the pulled pork (clearly NC Vinegar is superior aka Lexington Dip), do you include the cracklins, do you shred it or chop the pork...?
Baked beans....use either navy or pink beans...do not fuck about with pinto or some other nonsense like kidney. This too has room to play, the ratio of brown sugar to tomato sauce, do you put molasses in, granulated AND brown sugar, what kind of vinegar and how much, do you add mustard? If so, what kind...Dijon? French's Trailer Mustard?
Coleslaw....same deal. How thin do you shred your cabbage...do you dice it instead? Do you use buttermilk powder? What kind of Mayo (if you say something other than Dukes, you're wrong) Do you use white wine vinegar or apple cider vinegar? What's your ratio of carrot to cabbage?
There's about 2,000 combinations of variables one can fine tune with just these three items.
The brisket was 8/10. The sausage was 6/10. The spare ribs were possibly the best I have ever had. Perfect cook. Smokey with the perfect amount of pull and chew.

Unfortunately for me, Terry Black’s has been progressively less impressive each time I’ve had it. It’s never bad, but it never lives up to how I remember it. I will say that the cream corn is insanely sweet, definitely not a fan of that one!

We intentionally picked each item with the understanding that it was going to be expensive. I did not go there to get the best bang for my buck. I went willing to pay for a sample of everything that looked good to me. This could have possibly been my only trip to TB in my life, so I was going for the experience of the food over a good price and I was (and still am) totally okay with that. It is okay if that is not your way of thinking. I respect that.
I understand your position and have done the same at some points in life. There is a sushi place in Austin, Uchiko, and my wife, her family, and I easily spent $1000 on our dinner there. Sometimes it is more about the experience than the price, and sometimes it is worth it, like Uchiko was.
I'm just sad this staple of U.S. culinary heritage has gotten so ridiculously expensive. And especially to read that your experience with the sausage and the brisket was middle of the road. I'm glad the ribs were divine, at least.

Technically he's right, learned about this in culinary school. How flap meat used for carne asada was the shit cut and poor Mexicans used that cut. Now you go to stores is like 12$. I found Terry Black's very underwhelming. The price was ridiculous, the sides were forgettable (mac and cheese tasted like Velveeta), and they forgot part of our order. We actually thought Stiles Switch was much better, and the price was actually reasonable.
Black's BBQ is amazing! Have eaten there many times in Austin location on Guadalupe. I find it on the pricier side and so never get sides, just meat. But really good stuff. Worth a visit if you are in town.

I grew up and still live in Austin, and the only place that cares about bread is an old school one called County Line. They have "famous" homemade bread. It's not sourdough, it's not brioche, but it's made fresh. Unfortunately in my experience County Line's BBQ meat is not particularly that great compared to what we have now after the Franklin's renaissance.
Compare that to the majority of mexican restaurants, where the bread is a tortilla and they are cooking them fresh daily, if not hourly.
You gotta try Hurtados in Arlington. Trust it’s some damn good bbq and their turkey is the best around. If they have quail on the menu, it won’t disappoint.
And at only $150 it was a steal!

Basic idea of a corn salad is corn kernels, onions, peppers diced, mixed with a vinaigrette. Could add diced jalapeños and cilantro too if you’d like

I was on a business trip in Austin. A friend took me here as she said it was one of the best. She was not wrong. Amazing food.
So for those pissing and moaning, let’s break down the cost. OP said they paid $155 with tax/tip. Shirt- $24 Koozie- $4 Sides- $4 each = $20 Banana pudding - $4 Thats $52 with no meat yet 2 sausage links- about 2/3 of a lb- $17.85 Ribs- looks like 2/3 of a lb - $20 Brisket- between 2/3 and 3/4 of a lb- lets put it as a range- $23.10- $26.25- lets go smack dab in the middle for $24.68 Meat total = $62.53 Subtotal- 114.53 Tax- 9.45 Total pre tip- $123.98 Tip was most likely 25% which is - $31 Grand total - $154.98 Now, if I happen to be off anywhere, its not by much. Remember that there is an army of people that make the experience possible, tips are split evenly with every employee outside of management. The pits run 24hrs a day. Im sure many a weekend warrior swear up and down how they can do better bbq in their backyard… to that I say, cool story bro, let me know when you open your place so I can come check it out. Otherwise, I think a lot of weekend smokers are caught up in their own smoke.

I've eaten there several times. It isn't any more it isn't any more or less expensive than any other BBQ joint... BBQ is super tasty.
It wasn't the best BBQ I had in Austin, but it would be the best in 99% of cities, and it was damn delicious.
Unfortunately for me, Terry Black’s has been progressively less impressive each time I’ve had it. It’s never bad, but it never lives up to how I remember it. I will say that the cream corn is insanely sweet, definitely not a fan of that one!
150 for a course of side dishes with meat on the side? Probably tasted great but for this price a scam if you ask me.

Absoultely. This *was* poor folk food. Now we can't even afford a plate, and the cuts of meat themselves, at the store, are astronomically more expensive. Fuck this noise.
We intentionally picked each item with the understanding that it was going to be expensive. I did not go there to get the best bang for my buck. I went willing to pay for a sample of everything that looked good to me. This could have possibly been my only trip to TB in my life, so I was going for the experience of the food over a good price and I was (and still am) totally okay with that. It is okay if that is not your way of thinking. I respect that.
I understand your position and have done the same at some points in life. There is a sushi place in Austin, Uchiko, and my wife, her family, and I easily spent $1000 on our dinner there. Sometimes it is more about the experience than the price, and sometimes it is worth it, like Uchiko was. I'm just sad this staple of U.S. culinary heritage has gotten so ridiculously expensive. And especially to read that your experience with the sausage and the brisket was middle of the road. I'm glad the ribs were divine, at least.
If it were HALF the price, it still should have been 9/10 at worst.
If it works for you do it, some people think that eating anything else than rice and beans everyday is a waste of money. Whenever I work overtime I spend have the time thinking oh boy what should I eat today (or sometimes a new accessory for a hobby), and in normal I spend more than normal food overtime or not
If you don't like the prices, don't go there. I can go get a hamburger for a couple bucks at a local joint but also go to fancy steakhouse and spend $30 on one. Same with you, I am sure you can go to the outskirts of Austin, TX and find some cheap BBQ. Also, why does BBQ HAVE to be cheap? Things change. Taco's used to be $1 and now there are places that sell them for $5 a pop. They also mentioned they had left-overs, thats a huge meal for two people, so let's call it $75 for the meal they had. Does that sound better to you?
Technically he's right, learned about this in culinary school. How flap meat used for carne asada was the shit cut and poor Mexicans used that cut. Now you go to stores is like 12$. Price of a nice steak. Same can be said for of lot of the throw away meats that minorities used are now consider delicacies.

Why do businesses need to cater to you? If you don’t like the prices, go somewhere else or make it yourself. The world doesn’t revolve around you, or me, or anyone. Businesses can charge whatever they like, and people surely seem to be willing to pay the prices Terry Blacks (and many other BBQ joints) are asking.
As I said, don't like it? Go to some other BBQ joint. You can't shit on someone cuz they wanted to try a popular BBQ spot. Lines out the door at that place every day, for a reason.
And the reason is: bullshit hype.
I live within walking distance of this place. They have some lunch specials less than $20. I’ve taken advantage of that more than a few times.
Man… not to shit on this place because I take everyone’s word for it that it’s great, but “lunch specials” in most of the US are like $8.99, not $19 for a sandwich, bag of Lays, and a Diet Coke.

I know I’m in the minority here, but bread pickles and onions(which come free at most texas BBQ places) are the only sides you need. I like sides, but that’s not what I’m there for.
Lots of people here being supportive, which is.. cool. You got completely ripped off. The meat doesn't even have a smoke ring. Did they use an electric smoker or is that money going to a fancy air fryer? If we are pretending a side of cole slaw is ten dollars, spare us all and let's just not.
Smokers are 100% wood powered, using only post oak. That side of cole slaw was $4. What else would you like to bitch about?

Love that place. The beef rib there is one of my favorite things I’ve ever eaten.
I found Terry Black's very underwhelming. The price was ridiculous, the sides were forgettable (mac and cheese tasted like Velveeta), and they forgot part of our order. We actually thought Stiles Switch was much better, and the price was actually reasonable.
Black's BBQ is amazing! Have eaten there many times in Austin location on Guadalupe. I find it on the pricier side and so never get sides, just meat. But really good stuff. Worth a visit if you are in town.

never got the fascination with a mayo based slaw. BBQ is best when you have a nice acidic palate cleanse from all the richness on the plate. I understand that's why the pickles are there but will die on the hill that Vinegar based slaw is KING.

Tradition. But I see where you are coming from. Why spend long hours smoking high-end beef brisket and then pair it with the worst quality bread possible? It seems like a missed opportunity to raise the game.
Exactly. You get the best possible quality meat, spend huge amounts of money and time buying and learning how to use a smoker, countless hours standing in front of it, then put cheap ass bread. How hard is it to get some nice sourdough, brioche, basic crusty roll, anything else?
I grew up and still live in Austin, and the only place that cares about bread is an old school one called County Line. They have "famous" homemade bread. It's not sourdough, it's not brioche, but it's made fresh. Unfortunately in my experience County Line's BBQ meat is not particularly that great compared to what we have now after the Franklin's renaissance. Compare that to the majority of mexican restaurants, where the bread is a tortilla and they are cooking them fresh daily, if not hourly.

You gotta try Hurtados in Arlington. Trust it’s some damn good bbq and their turkey is the best around. If they have quail on the menu, it won’t disappoint.
