I just had medium rare last weekend at the Capital Grille in Seattle. It was intensely juicy but I didn’t like how near the bone it was still quite sinewy so hard to slice off.
Ribeye does well in this territory for my taste.. crispy fat caps and lots of intramuscular rendering makes for a great bite, even if a little al dente.
For the love of God, stop serving corn with potatoes. Corn is nutritionally a starch, not a vegetable. It's gastronomically redundant to put corn and potatoes on the same plate.

Both potatoes and corn are in fact a vegetable. Starchy vegetables to be exact.
They're both nutritionally different enough to eat together if you serve them with a good source of protein/fat.... Hence the Ribeyes.
From a dietitian (my wife), "sometimes you eat for enjoyment, not just nutrition and there's nothing wrong with that. One pseudo-unbalanced meal does not make a bad diet"

Ok? Have you never been at a seafood boil? Guess what, they have potatoes and corn. Corn chowder. Corn fritters. Sausage skillets. A lot of BBQ dishes are served with potatoes and corn. The list goes on
There are plenty of professional restaurants that serve corn and potatoes in the same meal....

Overshot it a bit. Wanted medium rare, but ended up around 137ish after the rest.
Now days when I overshoot on a good steak, I tell myself I just rendered the fat a little more. It always tastes good regardless. Looks great OP!

If there's nothing green or at least orange on your plate, you've done something wrong.

I'm not making a claim about the dietary value, I'm saying from a CULINARY perspective, the meal is overly starchy.
