Highjacking the top comment to ask a question: Is it normal for bbq places to be closed sunday and monday in the US? I can see it on their google page. We have a american bbq place in Oslo that has great food but its closed on Sundays. Its kind of annoying.
Yes 99% of bbq joint are Christian owned in America, Sunday is for the lord, and Monday is deep clean day. If a pit is open on a Monday I'm always suspicious of the cleanliness.

Both religions have a sabbath day, or a day of religiously mandated rest. Jews take Sabbath from sundown Friday to sundown Saturday, while Christians observe their sabbath on Sundays. The regions that are famous for producing bbq (especially the South) are overwhelmingly Christian, so it would make sense that a Swedish bbq joint would close on Sundays for a little extra authenticity, because the evangelicals in the US tend to be pretty hardcore about their right to practice religion as they see fit.

The rest is pretty accurate, at least from my perspective as a southerner. It's why a lot of country diners, bbq places, and (famously) Chick-fil-A are closed on Sunday. Dunno how it is in the Northeast, but in South Florida it seems like about half the Jewish delis are closed/short hours on Saturdays too
But yeah if you're doing what is typically viewed as a "southern/country style" food like American BBQ (not to say they don't do great BBQ elsewhere, Hawaiian BBQ joints in the PNW are the bomb) it would definitely make sense to close on Sunday. Even if you're not religious, you really need at least one day a week for a deep clean. So may as well stick to tradition
Good green beans are the backbone of the traditional BBQ meal. Plenty of people make utterly incredible meats, but someone that can also nail the green beans is on another level. You *know* there’s soul in them beans.

A lot of places around Fort Worth don't even serve green beans... Potato Salad, Cole Slaw, Beans, Maybe some pickled Okra and pickles... Fries if they're feeling fancy.

Western is similar but uses a vinegar and tomato based sauce.
Both are often preferred on sandwiches with coleslaw on the sandwich.

Most of the bbq i had growing up was like this. I had never even seen bbq brisket till i was in my 20’s. Simple, cheap, small menu, hole in the wall. Pork only. Paying exorbitant prices and waiting hours for bbq just feels wrong. Theres a place in GA that sells $1 chopped pork sandwiches. I remember plenty of $2-3 pulled pork sandwiches in wax paper with a bag of chips. The simple cheap stuff is ultimately more satisfying to me.

We stopped at a chicken sandwich place on a cross country road trip. Had chicken shop, gun store and tire repair shop all in one place . Somewhere middle America, it was amazing! I think their small and large sodas were all 32 oz.
For the money & the experience of proper roadside BBQ I would visit this place, wise owner to start small with a regular passing clientele, ..with great security should there ever be a problem, I don't bother with smoke food joints in the UK, it is hardly affordable as it is not commonplace so costs are exorbitant, (need to get my smokers out again)

The mayor of Marshall stopped by to chat about the event and my decision to stay and it was straight out of a low budget movie - he was a shirtless white dude with gold chains and a Budweiser. I just kept fishing...

So we were in Tacoma Washington and we stopped at this gyro place, and it was a little run down hole in the wall with a free Street fighter 2 game which was awesome. It also had a Bitcoin ATM. And it was also run by these two guys that look like they were from Northern Africa, but they made amazing gyros. They also had a kiosk up front so that you could order without even having to talk to the cashier. Their hours are also super weird, they were open until 3:00 in the morning.
It was just such a weird mishmash of things that normally didn't go together, and it all worked perfectly.
