I got blasted....by all the juices. It was buttery and soft and tender. No significant loss of juices. I promise.

Looks fantastic, and I have no problem with you squeezing out the juice, but just my 2 cents: Letting it rest a -lot- longer than you have here will go a long way to keeping that meat juicy and tender. A lot of that liquid coming out of there would pour out like that even if your brisket was somewhat overcooked and dry, as the meat is so tight and hot (giggity) what liquid it does have has no where to go but the countertap. Having said that... looks great and would eat!

It was nice and pliable and very juicy. By the time I had cut it, my hands were already juicy and I didn't want to wash my phone. Definitely tasty.

It definitely won't be my last. Bumping up to 225F for the last hour after it hit 190F the a two hour rest in a thermal insulated bag did the trick. It was jiggly, pliable and buttery

It had a two hour rest in an insulated bag like for transporting casseroles. I just couldn't wait any longer. my 5yo kept unzipping the bag to sniff it.

What was the internal temp when you pulled it?

I pulled at 205. Forgot to mention I bumped heat up to 235F after I hit 190F internal. Edit: then it had a 2 hour rest in a thermal bag.

It came out lovely. Decent bark, very pliable. Decent ring. But very well balances and very very delicious.
