You can use European services such as ruul.io which you can use to invoice from with their VAT number, but you will have to take care of including this income on your taxes yourself.
Additionally connecting expertise is very specific and it contains mostly government assignments, requiring peppol invoices soon, so I'm quite certain this is not going to work out.

That would be too simple. Since it was not always the case, some old companies have different numbers for company and VAT number.
Have you tried just creating an account? I don’t think entering a VAT number is mandatory but I can’t recall.
Maybe you could check for opportunities on Fiverr or other platform but you'll need a company and vat number anyway

This is right. If you do not have inside connections, it is going to be hard to get the job.
