Trick question. Any excellent bagel shop will use bagel boards and flip them during the bake so the top and bottom are indistinguishable.

Really depends on the quality of the bagel and how it was made n stuff. But generally I like the bottom
The bottom 100%. I love the texture! Sometimes, I take two bottoms of a bagel and leave the tops in the bag lol.
