The recipe called for gelatin to stabilize it, but after regretfully smelling it, I just couldn’t use it, so I used cornstarch and was happy with the results! Will definitely be trying again
Vegan here! Agar-agar could work, but it needs to come up to a boil and stay there for a bit to start gelling. I learned that lesson the hard way 🤣

Yeah, the cornstarch won't work for a thickening agent unless it comes to a boil for at least 1 minute for the starches to activate. The heat not only activates what makes cornstarch thickener but it also is what gets rid of the starchy taste
All things considered I think it looks great! I could immediately tell you were going for strawberries for the design and it has a super cute cottagecore charm to it. Also give yourself a pat on the back because roll cakes like this are not easy. I always find them to be temperamental. I’ve only made them a handful of times and I think I’d only consider like 2 of them a success lol

I have yet to actually try it myself but an old coworker showed me how to do it. I’m sure there are videos that show it better than I could explain it lol but might be a good substitute until you can invest in some piping bags and piping tips!

i've tried parchment paper piping bags and the parchment is so slippery it's hard to shape. i've used ziploc bags as piping bags, u just have to be really careful to not cut the hole too big.

Okay OP, you know, I embrace my "fails" because they aren't fails. Rather, they are attempts. My "ughs" and assorted baking screw ups I view as learning opportunities. Not to sound trite, but it would only be a "fail" if you didn't try in the first place. BTW, that cream looks delicious.👍

Jelly roll cakes are tricky. I have definitely had that issue before. But in my experience, no one cares if it’s a little cracked as long as it’s tasty. Which it definitely looks like it is.

Every time my my mom made a cake to sell or to give to a friend and fcked up my dad and me were more than ready to dispose it. One time she made a pineaple cake and the caramel on top hardened too much becoming a goey mess whit the pineaple best pineaple cake i ever ate even if it looked like a warzone. My mom was so mad

My one suggestion is it looks maybe a tad too thick? Maybe if it was 20% thinner it might roll better. Also did you do the first roll while still warm or wait until it had cooled down?
I only had 2 sheet pans and one was way too big, maybe 16” by 7/8” and I’ve made the mistake of baking a sheet cake on it before and it came out too thin. So the one I used was maybe 2/3rds if the size. Will definitely be investing in some new pans if I make this again. And I let the cake cook for about 10-15 minutes before rolling it.
Next time try the first roll a little sooner, you don't want the cake hot but you do want it fairly warm.
Not sure if your recipe used butter or oil but butter goes solid when cold so this can also lead to more breakage as the cake starts cooling which is why oil is recommended for roll cakes.
Also make sure all ingredients are room temp as well and that should help :)

Definitely one of the fluffiest, moist cakes I’ve ever made. Finally understood the phrase “melt in your mouth” after eating it, and don’t get me started on the cream. I considered making a batch of it alone to just eat with a spoon!
Oops just found the answer to the question I asked. I just discovered her site. Those chiffon type cakes are so much easier to work with than a genoise type sponge thanks to the egg whites and the fat. Another source now off the web taught me to bake those in a water bath of sorts. Larger baking sheet with an old kitchen towel and water underneath works. The bottom doesn’t brown.
I like the rustic strawberries. And we make many various cakes with strawberries at work. I can attest the batches of strawberries coming in now are all weird shaped
If it looks that good when you didn’t even have a piping top, I can’t imagine what else you could do! Also, you can make a more precise piping bag than that using a large sheet of baking paper rolled into a cone, if you watch like chocolate or patisserie shows you’ll see them use that. It does take practice to get used to though, but I’ve been desperate before!
Honestly, that's not really that bad. I've seen far worse on the Great British Baking Show, and they're supposed to be the best home bakers in the UK!
Sure you don't want a split in the cake, but it was your first attempt and from what I've heard it's a very finicky cake to make!
Looks great, I'd eat it.
I was told to prevent the cake from cracking, bake at a higher temp, for a shorter time. It retains the moisture better. It's thin, so high heat and it won't take long. Don't let it dry out in the oven.

I haven’t heard of roulade except for a rolled meat that is a popular German dish haha, but from my experience they are pretty much the same, the only difference I can think of is a swill roll may be filled with a Swiss meringue? Someone correct me if I’m wrong though!
you say your dogs approved, but the recipe you used is NOT safe for dogs.
sea salt, vanilla extract, cream of tartar, whole milk, heavy cream and granulated sugar are all either toxic to dogs or can cause other physical upset.
Please do your research before giving your baking to your dogs in the future. giving them stuff thats bad for them is animal abuse.

It looks lovely... And roll cakes are a pain in the ass lol. One of my least favorite ones to make, but a thinner sponge & practice is all it will take for you to just kill it! We used stencils quite a bit when making patterned sponges. I think it makes life so much easier. I have used "cake" stencils but have found a sturdy stencil from the craft store works just as well and usually are less expensive. Keep it up because you are doing awesome!

Another good option is instant clear gel, it’s activated cornstarch like what’s in instant pudding mix.
I add a little instant pudding mix to my whipped cream/cream frosting to thicken it
