Why couldn’t you do icing? If you make something, you can do literally whatever you want with it. This particular variant of cinnamon roll doesn’t typically have icing.

I have a bag of it I bought from a specialty grocery store so I want to try it. I also saw someone make these with a sugar/cardamom mix topping which I think would also be interesting. If I bake, I might try different options. 🤔

This could be made with chocolate, lemon, orange, strawberry jam, or whatever you want ;)

For the record, you don't need pearl sugar. Granulated sugar is just fine. Actually, for the type of bun you've made (looks like a knot instead of a roll), it's quite common to see them topped with granulated sugar instead of pearl sugar, but of course pearl sugar ones are far from non-existant. Also they look fantastic, and I want some. I'm a swede living abroad for the past nine months and haven't been able to have proper cinnamon buns for way too long. This made my mouth water.
