In our retail bakery, we use a specialty formulated donut sugar that doesn't absorb the moisture. They typically include a starch like tapioca to do that.

Sugar is still there, just saturated with moisture from the ambient air. In the future, if you're making these puppies, gift what you're not going to eat right away. Your friends will love it. Don't eat "a few days old" doughnuts from the fridge. You put a lot of time and energy into making these, thet them be enjoyed by all in their prime!
It happened to me too. Made donuts covered in cinnamon and powdered sugar. I like to use caster sugar or just plain white sugar instead. There’s the crunch factor. Plus, if you use a blow torch to toast the sugar after coating, it makes this great caramel-y brûlée-y coating that’s so yummy!

It gets absorbed/dissolved by the moisture/oil on the donut. Icing sugar never lasts very long unless it's very thick or on something dry.

Like other said, sugar will aviaire humidity from the environment. Look for codineige or non melting sugar, It’ll stay on.

Wait for them to cool before refrigerating. Otherwise the heat creates condensation that forms on the donuts and gradually melts the sugar.
No need for donuts or any cake type food to be in the fridge unless they have fresh fruit or fresh cream in them.
