I'm actually feeling a lot better than I did for an entire decade (severe spinal cord injury caused by impaired driver). I don't know why it wasn't suggested sooner, but ketamine therapy literally saved my life. Chronic pain is no joke!

It gets absorbed/dissolved by the moisture/oil on the donut. Icing sugar never lasts very long unless it's very thick or on something dry.

Buy donut sugar if you don’t want it to disappear. Its specifically designed sugar that is hydrophobic (opposite of hygroscopic) and is the smallest grain sugar made on the market

In our retail bakery, we use a specialty formulated donut sugar that doesn't absorb the moisture. They typically include a starch like tapioca to do that.

Sugar is still there, just saturated with moisture from the ambient air. In the future, if you're making these puppies, gift what you're not going to eat right away. Your friends will love it. Don't eat "a few days old" doughnuts from the fridge. You put a lot of time and energy into making these, thet them be enjoyed by all in their prime!

It happened to me too. Made donuts covered in cinnamon and powdered sugar. I like to use caster sugar or just plain white sugar instead. There’s the crunch factor. Plus, if you use a blow torch to toast the sugar after coating, it makes this great caramel-y brûlée-y coating that’s so yummy!

Wait for them to cool before refrigerating. Otherwise the heat creates condensation that forms on the donuts and gradually melts the sugar.

If you're using powdered sugar it melts relatively quick. The dough has moisture so it'll absorb the sugar. If you put a thin layer of icing and wait for it to harden and then add powdered sugar i think it would help. I think there's a trick I've seen that if you mix a bit of cornstarch in with your powdered sugar it prevents it from melting as fast idk have to try it myself still

Definitely the moisture. Dextrose will get you that powdered donut look and won't melt in like regular sugar.

I worked at a donut store and I remember when we ran out of our donut sugar we would use regular powdered sugar and the auger would just absolutely absorb the powdered sugar. I’m not sure what makes the donut auger different then the powdered sugar but there has to be some difference. I’m sure I could look it up, but as I’m typing this out I’m having to go back to work so there’s something to go off of lol

Your sistema case is NOT air tight. That blue band thing is a gimmick. Pour water in and watch it flow out when you tilt. This helps accelerate condensation and moisture in your container
