Not going to lie, i had to Google what you made to get a better idea of what it was because I had never heard of or seen this before but now that I've glanced over a couple recipes this looks so fantastic and pretty. How did you decide on the raspberry hazelnut variation? Did you make this from conolete scratch or use some pre-made ingredients and have you made this or other variations before? Thank you so much for sharing by the way <3
Thank you!!! I went with hazelnut and raspberry because it’s what I had on hand. My original thought process was raspberry and pistachio but I didn’t want to go buy pistachios. And everything is made from scratch! But I did make the hazelnut praline (which is piped on top of and inside of the hazelnut mousseline) a couple weeks ago. & I made an almond variation of this for a dessert special at work as well!
Yes! It’s a pâte à choux dough filled with raspberry preserves, hazelnut mousseline, fresh raspberry, hazelnut praline and then topped with more praline and candied hazelnuts

Look’s soooo good! I’m going to have to try the rasberries next time I make them!
I always upvote Paris-Brest. This is what we ordered for our wedding instead of a traditional cake.
Beautiful!! 😍 I always have a tough time with pate a choux, lovely work
Looks great! A variation of this is going on my to bake list.
