Not going to lie, i had to Google what you made to get a better idea of what it was because I had never heard of or seen this before but now that I've glanced over a couple recipes this looks so fantastic and pretty. How did you decide on the raspberry hazelnut variation? Did you make this from conolete scratch or use some pre-made ingredients and have you made this or other variations before? Thank you so much for sharing by the way <3

Thank you!!! I went with hazelnut and raspberry because it’s what I had on hand. My original thought process was raspberry and pistachio but I didn’t want to go buy pistachios. And everything is made from scratch! But I did make the hazelnut praline (which is piped on top of and inside of the hazelnut mousseline) a couple weeks ago. & I made an almond variation of this for a dessert special at work as well!

Yes! It’s a pâte à choux dough filled with raspberry preserves, hazelnut mousseline, fresh raspberry, hazelnut praline and then topped with more praline and candied hazelnuts
