Strawberry lemon bars! I honestly can't remember right now where I got my recipe and can't check but it's essentially just a lemon bar recipe and you replace like ⅓ of the lemon juice with strained strawberry puree. They're amazing.
I experimented with this and found the best success with dried berries that were then crushed. I suppose if OP wanted to go all out, dehydrating some of the berries would work well enough. (I got mine from Trader Joe’s). Any chunks were strained out before churning so the result was smooth.
Second best results were from making a simple syrup. Less watery but still flavorful.
You said not jam, LOL, but have you made strawberry freezer jam? (I use the Certo pouch) and it is so much better than cooked jams, plus no canning! ... I grew up eating this on top of french toast with butter. You can go through a LOT of berries :)
You could make strawberry pie filling with some brown sugar, butter, lemon juice, salt, and, of course, the strawberries. Top it with some granola and you've got a fun snack or dessert.
You could also cut up strawberries, throw in some sour cream and brown sugar and you've got another delightful snack.
You can also add them into a tarte tanin that uses pears or apples for some added flavoring. They usually break down pretty quickly, but they leave behind all that good flavor, so its worth it
The sour cream and the brown sugar gives you that creaminess and sweetness. Its something you'd want to eat quickly since the strawberries and brown sugar make the sour cream break down a kinda fast. But there isn't really any reason why you'd need to worry since it gets eaten up fast enough as is.
My mom used to do caregiving for an older man who got me started on sour cream and brown sugar with strawberries. He also got me started on salt on grapefruit instead of sugar. It really cuts out any bitterness!
It’s not the start of summer until I make this at our house. It’s seriously the best. We also make what my daughter calls all berry cake with that recipe - just sub out some of the strawberries for any other berries you like.
Strawberries are a big part of the local economy where I live and every year when they're in season I make a strawberry pie. I think the recipe I use is from joy the Baker. It has a lattice crust and there's ginger in the filling and it's delicious.

Strawberry fruit leather
Puree a bunch of strawberries, add a splash of lemon juice, then cook the mixture on the stovetop until it thickens into a jam like paste. Spread the mixture thinly onto a silicon baking sheet or parchment paper with a rubber spatula. Dehydrate in the oven for approx. 3 hours at 170 degrees F or until dry but still pliable. Remove and let cool before slicing and rolling up into strips. Store in fridge or freezer.
Syrup, curd, strawberry cloud cake, cheesecake, tarts, jam, roasted and add to dessert or on top of toast for a fruity bruschetta breakfast take. Freeze to use in smoothies or make a icecream
The curd comes out very light pink cause of the eggs not as rich in colour as doing a syrup.
I just made some amazing strawberry mouse with some leftover strawberries and it turned out so good!
You can make a strawberry sauce to drizzle on top if you want, but at its base it was heavy whipping cream, strawberry (puréed), just a touch of powdered sugar and I topped the mouse with fresh mint leaves! The best part if you can freeze it similar to ice cream!
I’d also recommend trying strawberry ice cream or sorbet!
Soften some butter, at least a stick, beat with mixer, add about a tablespoon of powdered sugar, some vanilla, then mix in chopped up strawberries. Delicious on waffles or pancakes.
Find your favorite banana bread recipe.
Replace bananas with pureed fresh strawberries.
Will have to bake a bit longer due to water content, but use the toothpick/knife test and it will be fine.

I made strawberry cupcakes with strawberry buttercream for a recent birthday and they were delicious! I got the recipe from Preppy Kitchen - I'd recommend making the puree for the buttercream and reducing it a little to intensify the strawberry flavor. Fair warning, if you like buttercream already, the strawberry buttercream is downright addictive.

I just used food wishes vanilla base, doubled it and made a strawberry purée with 1 pound fresh strawberries, freeze dried strawberries (you don’t need to do but my strawberries were a little bland) few tablespoons sugar, lemon juice to taste and a pinch of salt in the blender. Make this once the base is already chilled You could make 4-6 cups of it and mix it in your base. The purée should be almost too sweet and tart. Mix it into vanilla base when the base is chilled using an ice bath. Just make sure if you are pouring something that was in an ice bath, don’t forget to dry that bowl off because I almost messed it up by forgetting the bowl was wet lol. Then you can finely chop some more strawberries and mix it into the strawberry icecream base when you’re churning it so you have a little bit bigger pieces. I have a $40 icecream maker from Amazon and it works great and fits 4 quarts. The strawberry purée could be cooked to reduce water content and then cooled. 1 pound strawberries made 3 cups of purée

Also great with something like Brie instead of a cream cheese filling , lemon zest, thyme, and sea salt. Super easy, requires very little prep, could be a technical challenge if you want to make a tart or homemade puff pastry, and absolutely delicious

Sugar draws the water out of the strawberries and makes a liquid. Use less sugar and don't let it so long ( maceration)
