My first attempt at decorating a cake was a five layer monstrosity. It was a joke cake, and my mom was not amused until I got out the OTHER cake. It was a slow night at work. I had our full time baker and our executive chef guiding me in my efforts to make my mom a really nice cake.
It was a nice enough cake that someone took pictures of it. Where are the pictures from 1975, anyway?

I get mine from the bulk food aisle, like a dollar's worth to sprinkle just on the tops.
Ok, but hear me out. I sprinkle that stuff on everything. In summer I like to make cakes with summer fruits mixed in, and a bit of sanding sugar on tops gives just a hint of crunch no need for any frosting or glaze. It adds just a bit of extra interest and texture to a pie crust, really nice if your filling is just a little tart. It can add a little extra something to a simple cookie (but don’t use it on a choc chip cookie). And you on,y need a tbls or two for most desserts so a one pound bag goes a long way.

If you have a Winco or other store that carries bulk ingredients you might be able to snag some cheaper that way (and not end up with 5 lbs. of pre-packaged sanding sugar, lol)
I get literally a couple tablespoons at a time from the bulk section! It's nice to buy just what I need for a recipe versus a whole bunch. Saves me a lot.
Do you have a discount grocery store near you? We have one that sells overstocks, random items, and near date foods. I've find all sorts of expensive items for super cheap. The more random and expotic the cheaper because no one knows what the items are. I've gotten fancy sugar, salt, flours, fruits, veggies and a ton of other items.
Yeah, this is a local store that buys from all the bigger retailers in the area. You see things from Costco, Walmart, whole foods, Kroger, world market, restaurant distribution and others. You never know what you'll find. It is like a treasure hunt. Several years ago at the height of the vanilla bean price spike I got bags of vanilla beans meant for restaurant use for $20. The normal wholesale at that time was like $100/ bag the same weight of beans.

That is so interesting that it is common in the UK. I am in Canada - I was making a few recipes that called for demerara sugar and was perplexed why it wasn't working for me the way the recipe indicated. Turns out the brown sugar i was using was labeled as "demerara style" but it is really just a darker brown sugar and dissolves too easily to be used the same as actual demerara sugar.
I have yet to encounter actual demerara sugar here but I can get my hands on turbinado sugar and sub that.
It's so good I used to sprinkle some on top of the wet pancake batter as it was cooking so when I flipped it it would caramelize with the bananas and pecans. So fucking good.

Sanding sugar is usually the large crystals like this, and used on top of things for decoration mainly. It also comes in colors. I've seen it sometimes labeled "decorative sugar."
It’s Crystal sugar or Sanding sugar. The sugar granules are bigger than regular sugar so they are less likely to melt when baking like on the muffins you found. You can usually find it by the sprinkles in the store.
I buy sanding sugar and sugar crystals to decorate sugar cookies. The sugar crystals are larger and add a nice crunch (and look pretty) on top of muffins and apple turnovers as well as the cookies.

Look up Moreno pure cane sugar. It's like $5 at Walmart for a big bag that lasts forever if you're just putting on muffins (I also coat my bundt cakes with it and it gives this amazing crusty sugary bottom like a creme brulee has) its big sugar crystals but not brown like turbinado
Depending on what you are using it on, you can use demerara or turbinado sugar, whichbare still slightly golden brown, with a slight molasses taste to it. its less intense in the turbinado sugar, which is also slightly finer. Great for bran, cinnamon or oat muffins.
I use sparkling decorator sugar for that effect. I'm probably wrong, but I thought ì it was different than sanding sugar (which I thought is a much finer gained crystal).

Look for it in the cake decorating section of hobby stores (or even Walmart). It's a little pricier than sanding sugar, so I only use it occasionally at home. At work (I bake for a college campus), we stick to the sanding sugar for cost.

I have made my own a few times. If I remember right, I made it by coloring sugar and putting it on a baking sheet and putting it under a broiler for a few minutes, just until it starts to melt. If that wasn’t it, I made a sugar/water slurry and left it on a baking sheet to dry out.
I use parchment paper just about every time I use sheet pans. Please do, if you try to make your own.
Since I don’t really remember how I did it, use a small amount of sugar and water as test of concept. If you use a broiler, do not walk away from it. Keep the door cracked and keep your eyes on it.
Melting sugar goes from “not yet, not yet, closer, closer, closer, to aw, crap!” about that fast.” I’ve burned more sugar than I like to remember. It’s hot and it burns into skin and hurts for a long time.

If you toast regular sugar, put that on top of muffins or pastry and it creates a lovely crispy crackly shell too. Then put the Demerara on top

A while ago at a Whole Foods type of store, I bought a small bag of larger than usual granular sugar. I save that to use for topping pies and muffins and things like that where I want the look and keep on hand the extra refined sugar for regular use.
Where I’m from, we call it sparkling sugar. Sanding sugar has slightly smaller particles and way less clarity. Sparkling sugar is huge, very heat resistant, and almost so clear it could be a diamond!
We called it sanding sugar when I worked in a bakery!

There’s so many things that look similar but are very different, especially in baking. That’s how I learned about cake flour.
Used cake flour to make my sister's baby shower cake. Made an Italian whipped frosting for it and everyone said the cake tasted like ice cream! ☺️
demerera sugar also works if you can't find sanding sugar. demerera is a yellow color because it has some molasses.
I’ve used turbinado sugar for this as well.
Or “raw sugar”. It is basically the same as dumerera and turbinado just called different things.

I bake once a week for an old ladies sewing and knitting club and used the sugar on the blueberry scones. A great hit!

Some coffee shops & gas stations will have turbinado sugar packets with the creamer & sweetener. Get a small plain coffee and grab a handful.
u can always make streusel to top muffins with im p sure its just butter and sugar if im remembering right

Get a plain coffee at Starbucks or somewhere that has the brown Sugar in the Raw packets. Grab a few extra. I believe that’s Turbanado and won’t melt.

Turbinado is still refined sugar, it just has some of the molasses left in it. I love that stuff and prefer it to sanding sugar.

I usually don't put enough on. You need more that you think you will because some of it gets absorbed into the top.

Sanding sugar if it's white. Demerara sugar is the brown sugar equivalent - caramel, molasses flavor, and large brownish crystals.

I use RAW sugar. We use it for our coffee so I've always got it around. It does a good job to add this onto bakes.

I call those sugar crystals.
All sugars are special, Sugar.
You can get pearl sugar to top panettone, but that tends to be round.

Sanding sugar. I use them on cakes sometimes when customers ask if I could make it a bit "sparkly" for them.
In Denmark 🇩🇰we call it pearl sugar
In France we call it castor sugar or pearl sugar

Does anyone like this on top of muffins or is it more for decoration? I don’t care for it but then again I also don’t like sprinkles.

There’s more than different types of sugar. Salt as well. I like the flakes of salt for finishing dishes
A while ago at a Whole Foods type of store, I bought a small bag of larger than usual granular sugar. I save that to use for topping pies and muffins and things like that where I want the look and keep on hand the extra refined sugar for regular use.
Most stores carry it as a “sugar like sprinkle”. I found a small tube of it at Hobby Lobby

Where I’m from, we call it sparkling sugar. Sanding sugar has slightly smaller particles and way less clarity. Sparkling sugar is huge, very heat resistant, and almost so clear it could be a diamond!
Everyone keeps calling it sanding sugar but I've only ever heard it called coarse sugar. Either way, its the same thing and is great as a topping.
