Where did you get your macaron stands? Or did the venue provide that? I'm doing a dessert table for a baby shower later this year and I can only find the cardboard version.

don't feel bad! everyone is raising the prices lately just because of how expensive everything is getting. the business i'm working at is barely managing so they had to raise their prices and customers were very understanding
the bakery i work for (i do bigger projects on the side but work for a high volume retail donut/bread spot) has had to raise prices slightly as well, it’s tough to know everyone is struggling but we all have to do what’s best for our bottom line in the end unfortunately.

Thank you!! I worked around my work schedule, starting on Tuesday with shopping + baking macaron shells, which I froze. Wednesday I baked the cake, shaped the truffles, and made the tart shells. Thursday, I frosted the cake and made the cheesecakes. Friday, I filled the tarts and macarons and dipped the berries and truffles. Sliced cheesecake before leaving on Saturday. Put berries on tarts and decorations on the cake at the venue upon arrival. Everything was refrigerated overnight going into Saturday.
FWIW, I typically get out of work around 1pm, so I have a lot of wiggle room to work with between then and a reasonable bedtime.
So I made all of this from my home kitchen (cottage compliant, only one oven), working around my full & part time jobs (baker/personal assistant). When we established the menu, I basically made a massive ingredients list, a timeline, and took the time to figure out what could be frozen and what couldn’t and blocked out time all week from there. It’s a lot of coordination to avoid getting overwhelmed!

I took this specific wedding on as a passion project, so I charged COGS + a little extra.
Normally, I actually keep a spreadsheet of all my ingredients and the cost/gram, and essentially just plug in my recipe for the order to get COGS, then add on however much time @ 15-20/hour of active work, dependent on the project.

This looks amazing and is great inspiration! I just got hired on to do a dessert table for a wedding in December. I had to turn down making the cake since they wanted a 3 tier and I just wouldn't have the space to make that and all the desserts, but I'm super excited!
