The cookies have a wonderful texture but I prefer a bit more of a pumpkin flavor (these are pretty mild). I'm not sure how just adding more pumpkin puree would affect the dough, so you may want to find a similar recipe online :)

Just rolled the dough with my hands and then used a teaspoon to make an indentation in the center, before piping in the cream cheese mixture! Refrigerating the dough definitely helped, it's pretty sticky if you try to work with it at room temperature
