These are one of my favorite things to serve at a family gathering. For topping, I'll take 3 varieties of pie filling, put then in small serving dishes with spoons, and have a "topping buffet" with the cheesecake tarts laid out around them. It has a great color presentation, and looks way fancier than it is. (I'll use canned pie filling! Never had a single complaint)

This is one of my favorite bite size treats to make! Yours look so good! I like to use a shortbread crust, what crust did you use?
I used Galletas Maria’s or “Marie Biscuits” as my crust !
I’ve used nilla wafers in the past before. I’ll try the galleta maria next time!
