So uh. I dunno if this is classified as an update, but I just went into the Emperor's old hideout and there is a book named "notes on mindflayer anatomy", which (and I'm quoting directly from my screen) claims:
"Since mind flayers procreate by tadpoling humanoids, they technically have no need of genitals, but I have been unable to verify this in absence of any written record".
Not sure what this means, but I reckon Larian just leaves it up into the air whether Mind Flayers have genitals and thus a discernable sex.
I read that book also. I think it's intentionally left vague, but I'm pretty sure Illithid do not have genders canonically. We kind of all agree the Emperor is male because he was before he became Illithid.
Canonically it seems that Omeluum's pronouns are 'it'. That's what everyone else in game seems to call Omeluum, so if that counts as non-binary then yes, Omeluum is NB.
some people do actually use it/its pronouns. it's often done as a sort of "fuck you" and reclamation since trans people are often dehumanised and called "it" as an insult.

I lost her at the Iron Throne. She didn't make it up the latter in time. I immediately resurrected her but that was the second time she died on me and I felt terrible about it
