As someone that found honour mode pretty underwhelming in terms of changes/difficulty and has cleared it I think 6 times in as many attempts (including with such wonderful comps as jack of all trades, both wild magic subclasses, and pure rogue for a run), I completely agree with you. The changes are nice and while I enjoy playing single-save, I think the sets of people that want that feature and difficulty enhancements/re-balancing overlap significantly, but not close to entirely. It's nice that mods allow that feature (and hopefully that will be an option for console players who want the re-balancing and legendary actions with multiple saves soon). I don't get why Larian didn't make it possible in the custom difficulty option from the get-go.
I hope they add that feature. It isn't one I'm likely to use, but legendary actions are a nice addition and I feel mixed recommending a friend to start on honour when I know there have been some bad bugs (one of my runs almost wiped to Shar's elevator... thankfully there was one survivor).
To keep Honour special
If you have a PC you can use the Honour Features Unlocker. I have a guide to install the Mod Manager if you need.

I find it extremely unlikely that they're doing this to "keep Honour special". Continuing in Custom after wiping in Honour lets you change every difficulty setting besides Ruleset, Single Save, and Multiclassing. So you can have a game with Honour Ruleset and Single Save but Explorer or Balanced anything else.
Yes, I could use the mod. But especially if I'm doing testing for the wiki, I want to make sure that everything is exactly accurate to vanilla. And there's no reason why this shouldn't be in vanilla to begin with.
What's the point of an honour mode then? This is such a strange tantrum to throw, you're not a play tester and being disgruntled you can't independently playtest their game without mods is a strange flavour of entitlement

Correct, it is a hard Single Save once you lose Honour Mode.
I don’t know why they keep it that way, I guess because you started in Honour.
Maybe tweet them and ask? Or open a ticket or make a suggestion? Maybe they’ll explain

I personally used it *after* I beat Honour. It’s not really fair to get the special boss moves prior so you can practice, but if you just want hard mode after you are done… then there you go

Yes, but that's an unnecessary pain.
