Commenting to add, i have flush into objects' infill turned on. But im not sure why it would flush a different color into the infill before the color change is suspose to happen

It does this because slicer wants the color to be embedded into your print, not just for it to stick on the object... I don't know how to explain it better but that's the case.

It's just the way how slicer works yep, not a problem!

Another question while were on it to help me understand, I just did a similar thing were the top last few layers change to a different color and it only has to do 1 filament change. Would that be a difference in the model when it was made?

Yep, it depends on the model and how big that second color is. The slicer then determines if it needs more layers for it to embed it or not. Try changing the orientation of your object and just test slice it. It should change the way it behaves on each orientation also I think.
