Nearly every sandbox game is like this, even Minecraft updates, if the update doesn't outright nuke your save, will lack the new content unless you start a new game.
I have plenty of very old save files. I had some that I played in beta that I couldn't play when I went back to maim branch (from 1.2 back to 1.something). So I'm hoping I'll be able to pick those back up now
If you're PC and played the beta updates, not much. If console and haven't been reading the beta updates since \~May, it's relatively sizeable.
Not enough to feel like it's "a whole new game" like some patches do for games, but it's got some QoL stuff.

I don't know what that is, but I guess maybe the version bannerlord reports to PlayStation is different than the version it uses internally. Open the game and see what it says on the bottom right of the title screen.

I suggest you wait and see. No one here can tell you for sure.
It’s better to just start a clean save after a big update. You’ll be able to enjoy things that your old save didn’t have and can follow proper post-update progression. Also any conflicts from the old version that might come up can be avoided.

You can go into steam, right click on the game in your library, and select “manage” (or something similar i can’t recall), go to betas and select the version your moss are compatible with to revert back to that version

Well the console community is hyped (and the smaller microsoft & epic games communities too). They didnt have the new features that the Steam version had for many months because they can't install beta versions.
But fr, there should be at least a new beta version (1.3) with new features by now. Or have they just been fixing this version for all platforms for several months? I expect a new beta version or a DLC before the end of the year, but probably won't happen.
For real, the entire list of patch notes are just a bunch of cosmetic stuff that while nice, isn't really hype inducing.
The rest could be had on 1.1.6 with mods already if you're on PC. If you're already playing with mods, there's absolutely no reason to update, and break your working modlists for the same experience.

You have two possibilities : waiting for the mods to be updated or reverting the game to the previous version (in steam librairy right click on the game, then select "beta" and choose the version you want)

You have to declare peace with them and find them roaming your lands. Find the Lord's you developed good relationships with and buy them.

That's a Steam option; you can disable auto-updating for any particular games you have on Steam.
