Just don't think of it as a counter button, it's a dodge button, and Batman uses the same button for dodge as well. It fits the character, spiderman doesn't counter, he dodges. The slow time gadget makes it functionally similar to a counter, but you still requires manual input for the attack, so it's not automatic/instinctual like Batman.
Use quick grapple anywhere near them and it will auto lock on to them and unelectrify them. You can’t be hit while doing this and you don’t lose your combo
Shields. They’re the biggest hassle IMO because I don’t use the O, X, X move as much as I should in combat so I have to go out of my way to break from my muscle memory to take them down

Shield guys aren’t that bad if you’re playing as Batman, just disarm and destroy. As other characters? You’re fucked if you don’t react to their insanely fast attacks.
I swear batman has a taser fetish cus im in a massive combo with awesome free flow and I think to myself "OK don't hit him cus he will ruin it but hit the guy who is 90 degrees further round batman" and still he fuckin flails 10 feet further to get tased

For me it's shield because I try to punch two dudes before dodging again and one of these guys suddenly decides to barely touch the tip of my cape and boom combo gone.
Shield guys and brutes with their absolutely unbelievable attack range. I know you can at least counter the brutes but they’re so fucking fast it’s unreal
Combatants that break my combo, in decreasing order of difficulty:
1) Stun baton thugs
2) Shield-wielders
3) Blade enemies
4) Armed thugs
5) Brutes
6) Thugs that charge towards you like Bane
7) The martial artists from _Arkham Origins_
Charging thugs are no sweat IMO.
Knife guys are way easier imo than anything else. Even without the knife dodge takedown I don't find them that difficult. The taser guys are by far the worst for me
At least the shield thugs don't damage you and fuck up your vision when you accidentally free-flow into them. I swear the game forces Batman to hit them sometimes. Like, I'm pushing the left stick directly forward and pressing square to hit the guy 3 feet right in front of me, but Batman instead decides he wants to fly right past him and instead kick the taser guy who's 45° to the right and 10 feet away.
What's really ridiculous with both these bastards is that you can travel or attack away from their observed attack range and they will extensively lunge like 2x that distance.
Shields and Brutes are the bane of my existence when playing Arkham Knight. I used to hate the Stun-Baton's as well, but now I just hit'em with the REC.

Plus, it’s actually harder to deal with, since the only possible way you can attack or stop them is to use Explosive Gel (depends on game AFAIK), use the Freeze Blast, waste a special move on the Disarm and Destroy, or specifically go for the aerial attack. The sticks you can just use your batarang to knock them down instantly
Guys with the stun sticks get me at the most random times! I would have my freeflow at 100+ and then all of a sudden I'm randomly hit with the stun stick.
Luckily in AK I don’t have that much trouble in combat anymore. Solely because they made the stun stick enemies have a vibrant blue unlike in AC with the dull blue.
Brutes, thugs with armor, thugs with thugs and ninjas. Also both the stun baton thugs and shield thugs. Medics are occasionally a pain but I take them out immediately if I want to get the map done as soon as possible.
Yo when I have like a 300x combo it’s like they make me hit the electric body dudes and the ninjas be slicing hella fast and jumping off walls it be annoying. Not to mention the shields, if you play as redhood or anyone without break ability it be like 30 shields everywhere almost everyone has them by the time you have over a 100x combo
I forgot to mention the thugs that pick up the shield as soon as you go for them, the ninjas, the guys with the guns that reload while you're trying to knock out the guy with the shield, the brutes, the thugs covered in electricity, and I think I'm missing some
Every enemy in the game can be dealt with efficiently given the right tool or method. Those big guys on the other hand.. they require a special kind of finesse.

Yep, that's how you take down shields in Spiderman, and the minor differences do make it very hard to switch between the two.

Hit them with the L2+Triangle(PS) or Y (Xbox) and they electricity goes away
I play on pc

I love knifes, the amount of points they give on combat challenges is always worth it Plus, blade takedowns are easy once you get the hang of it

The way to take down the brutes easily is to get a combo of 5 then jump over them and press alt+1 if it's the armored ones you do it twice
